Here's your homework. Get a dozen eggs. You'll need that many. They are just that good.
Put them in a cupcake pan, in their shells. (WHAT?!)
Preheat the oven to 325 degrees.
Bake the eggs for 30 minutes, then immediately move them to a bowl of ice water.
When cool, peel the eggs (yay! So fun!)
You can boil your eggs the traditional way, if you're into that, but I think this is SO much easier.
Cut the eggs in half, and combine the yolks (I only used half the yolks because of the texture) with 2 cans of tuna fish, 4 T mayo, 4 tea spicy mustard (more or less to taste and your desired goopiness of the tuna), and optional relish if you like that in your tuna salad (ew!).
Stuff the eggs with the tuna salad.
INHALE.
They are SOOOOO good. And also the stinkiest lunch possible to annoy your coworkers. YAY! (The original recipe from Everyday Paleo)
I would've posted sooner but I was hoping to take some pictures...but we ate the eggs too fast!
I'm resting today, since Zumba and kickboxing were kind of tough to get through yesterday after running 20 miles between Friday and Sunday. I tried to take Chico for a walk, but he wasn't really into it, and then he ended up needing a bath when we got back. Does he kind of look like Scar from The Lion King or is it just me?
