Steve made breakfast this morning! Quinoa, sweet potato, and eggs, with cranberries. The quinoa was cooked in coconut milk, and the whole thing was flavored with cinnamon and ginger. It was good, but missing something...we'll try to perfect the recipe!
Steve grilled chicken and potatoes last night, too, before "the big storm," which so far isn't as bad as they predicted, but it's far from over. We had to get a new propane tank because ours ran out the day before, cooking the first batch of sweet potatoes. We marinate our chicken in lime juice (two fake plastic limes from the store), apple cider vinegar, honey, cilantro and salt. Today we're going to use it to make chicken salad with homemade mayo, grapes, and pecans.
Steve used to bring me a recipe every once in a while, but every since we did Whole 30, he's been on the lookout for compliant recipes and things he thinks he can eat without feeling sick. But he doesn't usually cook!
I am attempting to clean up some of my clutter and I found three recipe magazines in the back room. We just went through them, and in all those pages, there were only three recipes that we can/would eat. The rest are made with flour or highly processed ingredients, or they just don't look good! So much for kitchen creativity.
I think I'm going to go walk on the treadmill while I watch some TV/a movie, just so I feel like I'm doing something productive. I really want to get out of the house! We're planning to have leftover turkey meatballs and polenta for lunch, and shepherd's pie for dinner.
