The shrimp tortilla may not look like much, but it was delish!!! I'm sure you could dress it up with lettuce, sour cream, salsa, etc. but I'm a purist.
I went with the one pot chicken dinner. I browned a package of chicken thighs, then added 1/2 C chicken broth, 1/2 C milk, and a jar of pasta sauce (2 Cups worth). Then I simmered the chicken with half a box of gluten free Barilla rotini for 12 minutes, and voila! A dinner so authentic, it could have been made at Olive Garden! (I used Classico brand sweet tomato basil sauce.)
I ran five miles at the park, and all the miles were under 11 minutes, so I ran one more, but it was 11:04. Still, pretty good for 93% humidity! It was muddy because it poured down rain last night (tornado sirens and everything) and my NEW SHOES have a SPOT OF MUD ON THE TOE!!!!!
Tomorrow I'm going to the Cardinals game and then we have a big night at church -- first Wednesday dinner/Bible study/choir rehearsal. The problem with church dinners is that everything is SO good, so even if you only take a bite of everything, you end up with a full plate of food! I'm getting up early to run--start the day right. If you run hard enough, it helps you make good choices because you don't want to undo your hard work!
