Before you get too excited, I made it with ground turkey, so it's VEGGIE MEAT LASAGNA! Now, go crazy!
Instead of noodles, I just used zucchini. You can slice them thin or use a mandolin, but I just cut them into medallions (circles) because it's easier. I layered at follows:
tomato-basil sauce
zucchini rounds
most of one container of ricotta cheese
1 pound cooked ground turkey seasoned with oregano, salt and pepper
zucchini
sauce (used almost all of a small jar)
mozarella cheese (1/2 a small bag)
I used a square pan, so it only took two zucchini. It's in the oven for an hour at 350, but I'll probably check on it at 45 minutes, since I'm hungry!
An update on the honey mustard chicken: it was AWESOME as advertised, and warmed up great the next day. We used thighs just like the recipe said, but I want to try it on boneless skinless breasts, because every bite would be SO SAUCY! Make it tonight (or as soon as you have chicken). You won't be disappointed.
Today I made a playlist in Youtube of all the Zumba songs we use at the gym so I could Zumba in my room-ba. It's not quite the same, but I'm happy that I know the routines well enough to get a good workout in on my own. Tomorrow I'm running 12 miles (that's the plan). Out and back three, then out and back another three = 6 + 6 = 12. I'm hoping if I look at it that way, it won't seem so hard.
