Weekend Update

Finally made the crock pot pork! After losing my standard recipe (the blog is gone so my Pinterest link doesn't work!!) and finding it again, and then having Steve tell me he wanted something different, we made this recipe from Amy's Cooking Adventures.

Basically, I chopped up a sweet potato and put half in the bottom with an apple (I used the slicer and just threw it in the there with the skin on), poured in a cup of water, then I put the roast in and sprinkled it with sea salt, cinnamon, basil and rosemary. I topped the roast with another apple and the rest of the sweet potato. Low for about 8 hours, and I mashed the apples and sweet potato, as suggested and topped it with the pork! (It looks like of like baby food, so no picture, haha) Highly recommend it! 

We also made the Tomato Basil Crockpot Chicken from Civilized Caveman, for leftovers. Super simple, but next time I'll use a different brand of tomato sauce (we bought some at the store, not what's recommended in his blog). It's ok...I just like my sauce sweeter. It might taste better tomorrow after it sits! 

Yesterday, Steve ran 22.5 miles to get ready for his marathon in two weeks (he finished in under three hours, which was his goal and means he's on pace for his marathon goal), and I ran 13.1! I finished in 2:36:12, which is just under 12 minute miles. I ran 9:1 intervals for the whole thing, so I think I'll be able to beat that time pretty easily in two weeks at the MO' Cowbell half! (And then I'll eat all the bagels while I wait for Steve to finish!) 


We bought a desk on sale at Office Max a while ago that I want to use for my "home office/spare room/clothes closet" so we put that together today. FOR THREE HOURS. And it's still not done. AND I HATE EVERYONE AND EVERYTHING. I am NOT good at DIY. Especially when the directions are stupid and the screws don't screw in and where the frick is piece Y?????? So here's a picture of Chico, who was upset that we ignored him all day. It's a good thing that someone put dinner in the crock pot this morning, or I would've eaten pretty much everything in the kitchen for dinner. And then ordered a pizza. I have to screw in the decorative back tomorrow, and we also have a new deskchair that needs to be assembled, so Marco's (best pizza joint in the area) better be waiting for my call!
